Fun trick in Helgen Keep: By changing the Switch’s internal date, you can use Amiibo to amass a large number of arrows in your inventory. Do this by scanning your amiibo collection, opening the chests, collecting the arrows, saving, changing the date on your Switch’s settings menu, and then scanning your amiibo collection again. Repeat until you’re satisfied with the number of arrows you have. Higher archery levels can require more than 50 arrows, depending on which bow you use.
A few caveats: the treasure chests you summon will not disappear between reloads, so be sure to begin summoning chests very early on in Helgen Keep, as you can eventually run out of space for all the chests that your amiibo generate. And please beware that you will encounter significant framerate losses once you have summoned hundreds of treasure chests into existence in the Keep (once you leave the Keep, however, your framerate will return to normal).
Once you have enough arrows, you can shoot Ralof or Hadvar repeatedly to gain Archery skill experience - they will never turn aggressive against you. If you have the time, inclination, and patience, you can exit Helgen with your Archery at an incredibly high level.
