Uncle's Cheese Recipe

Ingredients
-1 gallon milk
-1/2 cup vinegar
-1 teaspoon salt
-herbs and spices

Instructions
1. Pour the milk into the large pot and place it over a fire. Heat the milk over a low fire and stir occasionally to prevent scorching.
2. Take the milk off the fire and slowly add the vinegar. The milk should start to curdle and separate into curds (solid) and whey (liquid).
3. Cover the pot and let it sit undisturbed for about 10 to 15 minutes to allow the curds to fully form.
4. Line the colander with cheesecloth and place it over a large bowl. Carefully pour the curdled milk into the colander to strain out the whey. Gather the corners of the cheesecloth and tie them together to form a bundle.
5. Hang the cheesecloth bundle and let it drain for about 1 to 2 hours. The longer it drains, the firmer the cheese will be.
6. After draining, transfer the curds to a bowl. Add salt, herbs, garlic, or other seasonings at this point for extra flavor.
7. Transfer the cheese to a mold or shape it into a ball or log. Cover and cool for at least 1 hour before serving.
